Does anyone have any plans or pics of when they put like a snowmobile engine or streetbike engine in a cart? How hard would it be too put a polaris 700 engine in that already uses the cvt system?

Having the CVT makes it easier but a 700cc is a big engine both in size and power. You would want to make everthing alot stronger in a small chinese kart as well as making the brakes much better. You would probably need to lengthen the rear engine carrier as well.
