Because the [img] link cannot be resized to fit the forum width - it's somewhere else and has to remain the size that it is.
If you just want to link to an offsite picture (but not show it) user the [url] tag - but I'm sure you already knew that. :-)
If you'd like to see the effect that linking to an offsite huge picture has - I can demonstrate for you. Neither way of portraying it is very enjoyable to view.
The first way is the way the forum used to work - if really big content was put in a post, it broke out the page rendering and stretched the GUI to the right. It caused the browsers to render OS level window scrollbars. Overall, it looked ridiculous and was a pain to navigate.
The second way is the way it works now - if really big content is in a post, inner scroll bars are created which holds the GUI in place, but puts a scroll inside the GUI, attached to the 1 post. It doesn't look great either, but it's way easier to navigate because only that one post slides and the rest of the GUI stays put.
760 pixels is the width of this post section. And it is possible to turn that restriction off but it will create one of the 2 above situations in some posts.
